I quite enjoyed the film about embracing butchering and I would really, REALLY, like to know more details regarding the cooking of the cuts.  The chop looks SOOOO delicious!  What fat did you use - coconut oil?  EVOO?  Leaf/bacon fat?

Also, what temperature did you have the oven at for the 6-hour roast?  The crispy skin snapping off really got my saliva going.  lol
