Long Table Harvest is the Hudson Valley’s first organization dedicated to gleaning from local farms in order to minimize food waste and provide quality local food to the greater Hudson Valley community.
We landed on the onion as an apt spirit vegetable for LTH. Not only is it strong, delicious, ubiquitous and unsung, it is made up of many concentric layers. Being that LTH seeks to use gleaned food as a vector for other social, cultural and environmental missions, the implication is that LTH is deeply nested in it’s operations and goals, and furthermore, that the cross-section of the onion, while extremely pleasing in it’s repetition, is not a cliche image. For some reason, it seems to fit the same bill as an ‘ugly’ vegetable, perhaps in it’s lack of symmetry and that it is hidden beneath the surface. We have to put forth effort to reveal the beauty within.
